1This is the record of the generations of Adam. When God created Adam, he made him in the likeness of God. 2 Male and female he created them. And he blessed them. And he called their name “Humankind” ⌊when⌋ they were created. 3 And when Adam had lived one hundred and thirty years, he fathered a child in his likeness, according to his image. And he called his name Seth. Genesis 05 : 01-03 (LEB)

There is an explicit connection between being in the "likeness and image" of Adam, and being a son of Adam. In the same way, humanity, is the child of Elohim
Humanity, "Adam" is in the singular, but it is a corporate term that includes men and women, male and female. It makes it impossible to say that only men are image-bearers (for female is created in his likeness just as male). One point of interest is, it seems possible to exegete this as saying, male and female TOGETHER, and only together comprise Adam/humanity, and thus comprise the "image of God".
